After a number of years we decided to take a break in the islands, hopefully to get some inspiration for new flavours. Resting under a tree as the sun dipped and melted into the sea our slumber was broken as a large object dropped from the sky beside us. Coconut! The answer had been right in front of us (and above us) since our arrival. As I tuned in to ‘Escape’ by Rupert Holmes on my Walkman a round of Pina Coladas arrived and we toasted our new flavour.
