Vegan Double Peanut Brownie

Ingredients
  • 1 pack of Kea Cookies ((gluten-free variety, broken into crumbs))
  • 1 cup natural peanut butter ((ensure it is vegan-friendly))
  • 1/2 cup coconut sugar or another vegan-friendly sweetener
  • 1 cup gluten-free all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 cup plant-based milk ((such as almond, soy, or oat milk))
  • 1/2 cup vegan chocolate chips
Instructions
    Prepare the Brownie Batter
  1. In a bowl, mix peanut butter and coconut sugar until smooth.
  2. Add gluten-free flour, cocoa powder, and baking powder to the bowl, and mix until combined.
  3. Gradually add the plant-based milk until the batter is smooth.
  4. Fold in the vegan chocolate chips.
  5. Bake
  6. Pour the brownie batter over the prepared crust in the baking dish.
  7. Bake at 350°F (175°C) for 20-25 minutes.
  8. Cool and Serve
  9. Let the brownie cool before cutting into squares and serving.
