Vegan Blueberry Tart

((your choice of flavor, broken into crumbs))

Coconut oil
((for mixing with cookie crumbs to form the crust))

Instructions
Prepare the crust

Mix the Kea Cookies crumbs with melted coconut oil.

Press this mixture into a tart pan to form the crust.

Refrigerate the crust while preparing the filling.
Prepare the Filling

In a saucepan, combine fresh blueberries, sugar, cornstarch, and lemon juice.

Cook over medium heat until the mixture thickens and the blueberries release their juice.

Let the filling cool slightly.
Assemble the tart

Pour the blueberry filling into the prepared crust.

Refrigerate the tart for at least a few hours until it sets.
Serve
