Mini Choc with Vanilla Icing

Delicious Mini Choc Cookies filled with Vanilla Icing.

On a night driving over the mountain passes the headlights cut into the darkness. The chunky 4×4 tyres kick out fresh snow, the hard wheels sending out a plume of soft snow that dazzles in the headlights. In the morning the snow is still frozen around  the car wheels like choc cookies with vanilla icing. This got  us thinking, so we’ve taken two wheels of smooth rich tasting choc cookies and strategically positioned a dollop of vanilla crème. They’re bite size for a fancy treat, and we always feel a bit fancy when we have something with crème in it.
